The rites alone span five days, on fixed dates that cannot be moved.
Mina on the 8th, Arafat on the 9th, Muzdalifah that night, then three days at the Jamarat. Add arrival, ihram, tawaf al-qudum before it starts and tawaf al-ifadah after, plus flights either side, and fourteen nights is close to the practical minimum for an authorised package. Anyone offering a seven-day Hajj is either not describing Hajj or not able to deliver it — treat that as a warning sign, not a bargain.

The tier here is the Mina camp far more than the hotel. Distance to the Jamarat bridge, how many share a tent and whether it's air-conditioned affect the five hardest days of the journey. A better Makkah hotel matters less than a better camp — if the budget is tight, spend it on Mina.
For comparison, UK agents currently advertise Hajj 2027 from about £3,500 for a budget shifting package, £4,500–£5,500 for mid-range, and £6,500–£9,100 for five-star non-shifting. Anything materially below that range warrants extra scrutiny of the operator's authorisation.
Hajj falls on 8–13 Dhul Hijjah and moves about eleven days earlier each year.
The Islamic calendar is lunar, so the dates shift annually and have fallen in the hottest months in recent years — Makkah and Mina regularly exceed 45°C. That has real consequences for elderly pilgrims and anyone with a health condition, and it's worth discussing with your GP. Authorised packages open nine to eighteen months ahead and sell out; final dates depend on the moon sighting.

Ask for it in writing and verify it independently — don't rely on a verbal assurance. We name the operator holding your booking and tell you how to check. If we can't source an authorised package, we'll say so.
Non-shifting keeps you in one Makkah hotel throughout. Shifting moves you further out for the Hajj days at a lower price. Both are legitimate; know which you're buying.
